Savory Crepes with spicy potato filling and tomato ketchup...

A truly spiced up pancake with a delicious potato filling. The pancake batter contains Green Chilies, Ginger and other robust Indian spices, which take the taste buds to the next level. This is a speedy brunch recipe but I can have them anytime if I had them on my table. Inspired by my favorite Chef Gordon Ramsay.

This was my first try to make crepes or I should mention, 'my first successful try to make crepes'. Previously when I tried making them, they would either get stuck to my pan or break into bits. But that time my crepe batter did not contain any eggs and this was the main reason to my countless failures...(here, OVER-EXAGGERATION). This time the secret to my gorgeous crepes was the presence of an egg. I realized because of the egg, the crepe would set perfectly and won't break while flipping. "Kitchen Conundrum Solved"

Vegetable Tacos with an Indian Touch...

When a thought about Mexican Food pops up in our minds, the first thing we imagine are the classic Tacos. Today I tried making Tacos but in my style. These tacos are Tangy, Crunchy and Healthy at the same time. Since taco shells are Baked not Fried. They contain a Potato filling and Green Chili Coriander Chutney.

To make the Taco Shells:-
  1. Take All purpose flour and Corn Meal in equal proportions. Add salt, black pepper, turmeric to enhance the flavors. Whisk together to combine everything. Now, add a tablespoon of any kind of Oil and with the help of water, make a smooth dough. Let it rest for about 15 minutes.
  2. Roll the dough into tortillas and use a cutter, to be precise. Roast them on a pan until spots appear on both sides. Brush the tortillas with some oil. Hang them on a wire rack and bake them in a preheated oven at 200°C for 15-20 minutes. Baked Taco shells are ready and they can be stored in an air tight container for future usage.
To make the filling;-
  1. Heat a pan with some oil. Add mustard seeds, cumin seeds, fennel seeds and asafoetida. After they start to crackle, throw a finely chopped onion, ginger, garlic and green chilies (you can gauge the heat). Saute until onions turn translucent.
  2. Add a diced (boiled) potato along with some salt and black pepper. Add turmeric, garam masala, cumin powder, coriander powder and cinnamon powder. Let it cook for about 2-3 minutes.
  3. For the Tangy Green Chutney, grind together coriander, green chili, salt, lemon juice, oil, chaat masala and ginger-garlic with some water into a thick paste.
  4. To assemble the tacos, fill the taco cavity with the potato filling. Then add some chutney and lastly garnish with some onions and capsicum.

"GRILLED LIKE HELL" PIZZA🍕...

This pizza is crunchy on top while soft below. The smoky taste of the veggies and the stringy mozzarella take it to the next level. It tastes like Heaven but the name given is "Grilled like Hell" Pizza.

Toppings:-
Grilled vegetables (onion, tomato, bell pepper), Mozzarella and Cheddar cheese, Dried Oregano and Basil.

Banana Oats Cookies with roasted Almonds...

   

Vegan Food culture is the Trend of this decade. Its fashionable to Go-Vegan. Veganism is a type of vegetarian diet that excludes meat, eggs, dairy products and and all other animal-derived products. Many foods are associated with veganism, such as soy milk and tofu. Inspired from veganism, I tried making vegan cookies which are also gluten-free, oil-free, sugar-free, dairy-free and free from time consuming cookie making process. The only sweetness they contain are the natural sweetness inherited by the banana. Instead of all-purpose flour, I used oatmeal as it is a super-food. To cut down the boredom and to add some fragrance and crunch, there was a need for the addition of some toasted almonds. This recipe is a must try

RECIPE:-

Ingredients:

  • 1 Banana 
  • Oatmeal 75 gm
  • Salt 1 teaspoon 
  • Baking powder 1 teaspoon
  • Roughly chopped Almonds
  • Almonds for decoration

Procedure:

  1. Smash a banana until lumps disappear.
  2. Add the oats, salt, baking powder and chopped almonds. Prepare a sticky dough.
  3. Grease a baking tray with little oil and pour a tablespoon dough to make soft cookies.
  4. Press them a little as these do not flatten while baking.
  5. Top with an almond. Bake them in a preheated oven for about 15 to 20 minutes or until golden brown.

Quick and Simple Chicken Curry...

 RECIPE
Ingredients:-

  • Chicken (curry cut) 200gm 
  • 1 medium sized Onion
  • 2 Tomatoes 
  • 2 tablespoon oil
  • Cumin seeds 1 teaspoon 
  • Aniseeds (saunf) 1 teaspoon 
  • Garam masala 1 teaspoon 
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Ginger-Garlic paste 1 teaspoon
  • Asafoetida 1/2 teaspoon
  • Black Pepper powder 1 teaspoon
  • Salt to taste 
  • Cinnamon 1 teaspoon [optional]
  • Butter 2 tablespoon
  • Water
  • Coriander leaves for garnish

Procedure:-

  1.  Heat oil in a wok/kadhai. Add the cumin seeds and aniseeds. After these start to crackle. 
  2. Add the ginger garlic paste and finely chopped onion and let them cook until onion becomes translucent.
  3. Add the tomatoes. Sprinkle little salt and cook until tomatoes become soft. 
  4. Add the remaining spices and cook for a minute.
  5. Let the cooked vegetables cool a little and blend them until smooth.
  6. In the same vessel, add butter and saute the chicken for 2-3 minutes.
  7. Add the paste to the chicken. Add a little more salt. Cook for around 20-25 minutes. Gradually add water if the gravy thickens.
  8. Sprinkle with some coriander and enjoy with chapatis or rice.

Orange 🍊 flavored Butter Cookies...

         These flavourful cookies are best with tea. They smell like Orange as it contains zest of an orange and it's juice. They do not contain any egg and can be made with any kind of gluten-free flour.

Chocolate Donuts with Vanilla Buttercream Frosting...

  

Recipe 

Ingredients:-

For the Donuts
  • All purpose flour
  • Cornflour 
  • Yeast 
  • Honey
  • Powdered Sugar 
  • Cocoa powder
  • 4 egg yolks
  • Milk
For the Buttercream
  • Softened butter 
  • Vanilla essence 
  • Icing Sugar 

Procedure:-
  1. Take a clean large bowl and sift the dry ingredients. 
  2. Add the yeast to the milk at 110°C along with honey and whisk until yeast dissolves partially. Let it rest for 15 min until the mixture becomes little frothy. 
  3. Add the yeast mixture to the dry ingredients along with the egg yolks and powdered sugar. Make a smooth dough.
  4. Cover the dough with a kitchen towel and let it rest for 2 hours at room temperature and for 6 to 8 hours in the refrigerator.
  5. Cut donuts from the dough and place them on a baking sheet. Let them rest for 15 min until they poof up. 
  6. Bake them in a preheated oven for about 20 min at 180°C. 
  7. For the Buttercream, beat the butter until fluffy. Add the icing sugar and vanilla essence. Mix until the sugar is dissolved.
  8. Glaze the donuts with the buttercream and sprinkle some donut which is broken into small bits. 
  9. Enjoy.

Paneer Tikka Kebabs....


RECIPE

Ingredients:-
  • Cubed Paneer / Cottage Cheese
  • Squared onions
  • Squared tomatoes
  • Squared capsicum 
  • Cumin seeds 1tbsp
  • Asafoetida 1/2tsp
  • Coriander powder 1tsp
  • Cumin powder 1tsp
  • Garam masala 1tsp
  • Chaat masala 1tsp
  • Dry mango powder 1/2tsp
  • Black pepper powder 1tsp
  • Salt to taste 
  • Oil 2tbsp
  • Ghee / Clarified butter 1tbsp
  • Milk ( to smoothen the marinate)

Procedure:-
1. Grind together Chopped onions, tomatoes and spices. Add salt, vegetable oil, ghee and milk. Make a smooth paste.
2. Marinate the vegetables and paneer pieces in the paste. Keep it aside for 2 hours.
           
3. Preheat the oven at 200°C for 10 minutes.
4. Brush the skewers with oil and place the vegetables in the order (onion, tomato, capsicum, pander).
Leave some space for paneer to cook evenly.
5. Grill the kebabs for 10 minutes or until browned.
           
           
6. Remove from the and serve with chutney.
